A note from Nic
This recipe has been developed specifically for that dinner when you get home late from a work trip and have nothing in your house. Best prepared after 10pm, having dealt with an international flight, an unexpected layover, and an overly chatty uber driver from the airport. All ingredients being shelf stable allows you to ensure that no matter what time you're opening this recipe - it will be ready to go.
Ingredients
- Required:
- 1 Can of Sardines -> Recommend Cento Sardines, but really any tinned fish works with this recipe so long as they are being stored in olive oil.
- 1 Fistful of Pasta -> You do you. No judgement here. Spaghetti or Bucatini works best
- 1 Amount of Butter -> See recipe for amount
- 1 (or maybe 2) Scoops of Capers
- Garlic -> Jar of minced, fresh, dry seasoning, etc. You just needs something. Part of this recipe's "charm" is how awful the kitchen will smell and this really amps that up a notch.
- Lemon Juice -> If you have a lemon that's still good, you have won the lottery.
- Black Pepper
- Optional
- Hot Pepper Flakes -> Recommend using "Dark and Savory" flakes from Flat Iron Flakes, but whatever you got works.
- Parmesan Cheese - Check for mold since you've been away! If it looks good to you great! Grate and add as much as you'd like.
Method
- 01
1. Fill pot with water, add a lot of salt and turn on high.
- 02
2. While water is heating, put "X" butter in pan at low enough temp so that it just melts.
- 03
X = 1/2 tbsp butter * number of days on work trip. Stir so that it doesn't burn.
- 04
3. Once water is boiling - add pasta to water and cook according to instructions. You're going to want to cook it for about 90 seconds less than whatever the box says.
- 05
4. Two minutes after you started the pasta, open sardines and toss em in. You want to break the sardines up. Don't mash them. We want them too warm through, but that's about it. Constantly stir gently for the rest of this recipe.
- 06
5. Optional Pro Tip - If you live with any other human, now is the time to deal with sardine can. It will smell up your house if you leave it in trash as is. You can either wash it out and put in the trash (okay) or run it to the outside trash (ideal)
- 07
6. Once the pasta is not cooked, but almost cooked -> get rid of the water and toss your sardine butter sauce into the pot the pasta was cooking in. Re-add pasta. Stir well adding a splash of lemon juice to taste. If you're doing parmesan - add it now.
- 08
7. Garnish black pepper and red pepper flakes if so desired.
